Hey, I follow this writer on YouTube who makes videos with writing advice. A lot of the methods I used to structure my second book come from him. I think you might find his latest video helpful. It’s on writing side characters:
Just a warning, he will occasionally reference books that have some very bad stuff in like ‘Game of Thrones’ and ‘Best Served Cold’. So if he mentions a book or movie that catches your interest, use caution before checking it out for yourself. For the most part, the videos themselves are clean. His video on dialogue mistakes does have some swears in, and if you watch his video on character arcs, you might want to skip over where he talks about the point ‘Darkest Low’ because of what happens at this point in the book he is using as an example of a negative arc. (He doesn’t go into detail about the event itself, just what the significance of it is to the character’s arc).
But this particular video is pretty clean (there is a brief clip towards the end where someone is holding up a decapitated head from Gladiator 2), and I think it will help you identify why some of your side characters have felt samey, as well as give you some advice on how to make them more interesting.

Ooof, yeah, no GOT. I do like the soundtrack to that series, but I would never read/watch it.
